- 2 cups sweet potatoes (peeled and chopped)
- 1 cup brown sugar (light or dark)
- 1/2 cup unsalted butter (softened)
- 3 large eggs
- 1/4 cup bourbon
- 2 tsp ground cinnamon
- 1 pie crust (store-bought or homemade)
Instructions
- Preheat the oven to 375°F (190°C).
- Boil sweet potatoes in salted water until tender, about 15-20 minutes; drain and mash.
- In a bowl, mix the mashed sweet potatoes with brown sugar, butter, eggs, bourbon, and cinnamon until creamy.
- Pour the filling into the prepared pie crust and spread it evenly.
- Bake for 45-50 minutes until set.
- Cool on a wire rack for at least 1 hour before serving.
Notes
Serve warm or at room temperature. Consider topping with whipped cream or ice cream. Store leftovers in the fridge for 3-4 days, or freeze for up to 2 months.
