  • 1 cup brown sugar (light or dark)
  • 1/2 cup unsalted butter (softened)
  • 3 large eggs
  • 1/4 cup bourbon
  • 2 tsp ground cinnamon
  • 1 pie crust (store-bought or homemade)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Boil sweet potatoes in salted water until tender, about 15-20 minutes; drain and mash.
  3. In a bowl, mix the mashed sweet potatoes with brown sugar, butter, eggs, bourbon, and cinnamon until creamy.
  4. Pour the filling into the prepared pie crust and spread it evenly.
  5. Bake for 45-50 minutes until set.
  6. Cool on a wire rack for at least 1 hour before serving.
