Ingredients

- 1 cup milk
- 1/4 cup melted butter
- 1 large egg
- Zest of 1 lemon
- 1 tbsp lemon juice
- 1 cup blueberries (fresh or thawed)
Instructions
- Whisk dry ingredients together in a bowl.
- In another bowl, combine the wet ingredients including lemon zest and juice.
- Gently fold the wet mixture into the dry ingredients.
- Toss blueberries in a teaspoon of flour and fold them into the batter.
- Preheat waffle iron to medium-high heat (375–400°F).
- Scoop batter into the preheated waffle iron and cook for 3–5 minutes until golden brown.
- Serve warm with toppings of choice.
