Ingredients

- 1 large diced onion
- 1 diced red pepper
- 3 minced garlic cloves
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon cayenne pepper
- 1 pound drained canned black-eyed peas (or 1 cup soaked dried peas)
- 4 cups low-sodium stock
- 2 tablespoons lemon juice
- Salt to taste
- A handful of chopped parsley
Instructions
- Sauté the onion, red pepper, and garlic in olive oil over medium-high heat for 5–7 minutes until softened and caramelized.
- Add smoked paprika, cumin, and cayenne; stir for 30 seconds.
- Add black-eyed peas and stock; bring to a boil.
- Reduce heat to low, and simmer uncovered for 20–45 minutes until flavors meld and beans are tender.
- Finish with lemon juice, salt, and chopped parsley.
Notes
This stew improves after a day in the fridge as the flavors meld. Serve over rice, quinoa, or polenta, and top with greens or yogurt.
