Ingredients

- 1 lb raw shrimp (medium, peeled and deveined)
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1/2 tsp smoked paprika or Old Bay
- 1 tbsp olive oil (for searing)
- 1/3 cup mayonnaise or Greek yogurt
- 2 tbsp lemon juice
- 1 tbsp Dijon mustard
- 1 tbsp olive oil (for dressing)
- 1/2 tsp honey
- 1 tbsp water (to thin dressing, if needed)
- 2 cups mixed greens
- 1/2 cup chopped celery
- 1/4 cup red onion
- 1/4 cup chopped parsley
Instructions
- Pat the shrimp very dry with paper towels and season with salt, pepper, and paprika.
- Heat olive oil in a large skillet over medium-high heat.
- Sear shrimp for 2 minutes per side until opaque and slightly curled.
- Mix together mayonnaise (or yogurt), lemon juice, Dijon, olive oil, honey, and water to create a dressing.
- Toss seared shrimp with mixed greens, celery, red onion, parsley, and dressing.
Notes
For best texture, serve immediately and keep dressing separate if storing.
