Ingredients

- 1 cup water
- 1/2 cup butter
- 1 cup all-purpose flour
- 4 large eggs
- 1/2 tsp salt
- Vegetable oil for frying
- 1 cup powdered sugar
- 2–4 tbsp milk
Instructions
- In a saucepan, combine water and butter and bring to a simmer.
- Add flour and stir until a smooth ball forms.
- Remove from heat and let cool for a couple of minutes.
- Incorporate eggs one at a time, stirring until the mixture is glossy.
- Transfer the dough to a piping bag fitted with a star tip.
- Pipe rings onto parchment paper.
- Heat oil in a deep pan, drop in the parchment circles cruller side down.
- Fry until golden, flipping once, then drain on paper towels.
- Dip in glaze while still warm.
Notes
Use room-temperature eggs for a smoother dough. Don’t crowd the frying pan to avoid sogginess.
