Ingredients

  • 2 cups plain yogurt
  • 1/4 cup fresh lemon juice
  • 4 cloves crushed garlic
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/4 teaspoon cumin
  • 1 pound chicken breast, cut into bite-sized pieces
  • Skewers (metal or soaked wooden)

Instructions

  1. In a bowl, mix yogurt, lemon juice, garlic, tomato paste, olive oil, paprika, salt, cayenne, and cumin to create the marinade.
  2. Add chicken pieces to the marinade and coat well. Marinate for at least 2 hours or overnight.
  3. Thread marinated chicken onto skewers, alternating with onion or bell pepper, if desired.
  4. Preheat the grill to medium-high heat. Place skewers on the grill and cook for 10 to 12 minutes, turning occasionally until done.
  5. Remove from grill and serve hot with pita and fresh salad.

Notes
