- 8 corn tortillas
- 2 cups enchilada sauce
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 small onion, chopped
- 1 tsp taco seasoning
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1 pinch cayenne pepper
- Fresh cilantro, for garnish
Instructions
- Cook ground beef in a skillet over medium heat until browned, seasoning with onions and taco spices.
- Roll the beef mixture into corn tortillas and place in a baking dish.
- Cover with enchilada sauce and sprinkle with cheese.
- Bake in the oven for about 20 minutes at 350°F (175°C).
- Let the enchiladas rest for a few minutes before serving.
