  • 2 cups Cooked, Shredded Grilled Chicken (Seasoned with salt, pepper, and spices before grilling)
  • ¾ cup BBQ Sauce (Choose a sauce that balances sweetness and tanginess)
  • 2 cups Shredded Mozzarella Cheese (Can mix with sharp cheddar for extra flavor)
  • 1 medium Red Onion (Thinly sliced for topping)
  • 1 handful Fresh Cilantro (For garnish)
  • 1 tablespoon Olive Oil (For brushing on the pizza dough)

Instructions

  1. Prepare the pizza dough by combining 2 cups of flour, 1 packet of yeast, and ¾ cup of warm water in a mixing bowl. Add a pinch of salt and knead until smooth. Allow it to rise in a warm place for about 60 minutes or until doubled in size.
  2. Marinate the chicken breasts with salt, pepper, and spices. Preheat your grill over medium-high heat.
  3. Grill the chicken breasts for about 6-7 minutes on each side until cooked through. Remove from the grill and let rest before shredding.
  4. Shred the chicken and mix it with the BBQ sauce until well coated.
  5. Preheat your oven to 475°F (245°C) or prepare the grill for indirect heat.
  6. Roll out the pizza dough on a floured surface to a 12-inch round. Brush the top with olive oil.
  7. Transfer the dough to the grill or a preheated pizza stone in the oven and cook for about 3-5 minutes until the bottom is golden.
  8. Spread the BBQ chicken mixture evenly over the crust.
  9. Sprinkle shredded mozzarella cheese over the chicken.
  10. Add thin slices of red onion on top of the cheese.
  11. Return the pizza to the grill or oven and cook for an additional 5-7 minutes until the cheese is bubbly and golden.
  12. Remove the pizza and let it cool for a few minutes. Garnish with fresh cilantro before serving.
  13. Slice the pizza into wedges and serve hot.

Notes
