Ingredients

Scale
  • 3 large egg yolks
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch

  2. Temper the egg mixture with hot milk, whisking constantly.
  3. Return the mixture to low heat and cook until thickened (180–185°F).
  4. Remove from heat and stir in butter and vanilla extract.
  5. Pour a thin layer of custard into the prebaked pie crust.
  6. Layer sliced bananas over the custard and repeat with remaining custard.

Notes

For a gluten-free option, use a gluten-free crust. To prevent browning, add banana slices just before serving.
