Ingredients

  • 1 ½ cups crushed vanilla wafers
  • ½ cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 3 ripe bananas, mashed
  • 1 tsp vanilla extract
  • 1 cup whipped cream (for serving)
  • Fresh banana slices (for topping)
  • Crushed vanilla wafers (for topping)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, mix crushed vanilla wafers with melted butter and press into the bottom of a springform pan to form the crust.
  3. In a large mixing bowl, beat cream cheese and sugar until smooth.
  4. Add eggs, mashed bananas, and vanilla extract, and mix until well combined.
  5. Pour the cheesecake mixture over the prepared crust.
  6. Place the springform pan in a larger baking dish filled with water to create a water bath.
  7. Bake in the preheated oven for about 60 minutes, or until the edges are set and the center is slightly jiggly.
  8. Turn off the oven and let the cheesecake cool inside for an hour.
  9. Remove from the oven, cool at room temperature, then refrigerate for at least 3 hours or overnight before serving.
  10. Top with fresh banana slices and crushed vanilla wafers before serving.
