Ingredients

  • 1 pound (450 g) Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss Brussels sprouts in olive oil, salt, and pepper, then spread them cut-side down on a parchment-lined rimmed baking sheet.
  3. Roast for 18–22 minutes until deep golden.
  4. Drizzle with balsamic vinegar and honey, then roast for an additional 2–3 minutes.
  5. Let rest for 2 minutes on the baking sheet before serving.

For best results, use firm and bright green Brussels sprouts. Ensure they are dry before roasting to prevent steaming.
