Light and fluffy baked lemon donuts topped with a sweet lemon glaze.

Ingredients

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup whole milk (or almond milk)
  • 1/4 cup melted butter
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 1 cup powdered sugar (for the glaze)
  • 2 tbsp fresh lemon juice (for the glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a donut pan.
  2. In a bowl, whisk together the flour, baking powder, and sugar until combined.
  3. In another bowl, mix the eggs, milk, melted butter, lemon juice, and lemon zest until smooth.
  4. Combine the wet and dry ingredients gently until just mixed.
  5. Fill each donut mold halfway with batter and bake for 12-15 minutes until golden brown.
  6. Cool the donuts slightly before glazing them with a mixture of powdered sugar and lemon juice.

Notes

Serve warm or at room temperature. They can be stored in an airtight container for a few days.
