- 4 bone-in chicken thighs (about 1.5 lbs)
- 2 tbsp extra virgin olive oil
- 2 tsp Italian seasoning
- 1 tsp garlic powder
- 1 tsp salt
- ½ tsp black pepper
- ¼ cup freshly grated Parmesan cheese
- 2 tbsp lemon juice
Instructions
- Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
- Arrange the chicken thighs in the dish. Drizzle them with olive oil, then sprinkle with Italian seasoning, garlic powder, salt, and pepper.
- In a bowl, mix together the Parmesan cheese and lemon juice until well combined.
- Spoon the cheese mixture evenly over each chicken thigh.
- Bake the chicken uncovered for 35-40 minutes, or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for five minutes before serving. Drizzle any remaining sauce over the chicken for extra flavor.
Notes
For extra crunch, broil the chicken for the last 2-3 minutes of cooking. Adjust the seasoning to taste.
