Description

A delicious and easy meal featuring chicken thighs seasoned with Italian spices and Parmesan cheese, perfect for busy weeknights.


Ingredients

  • 4 bone-in chicken thighs (about 1.5 lbs)
  • 2 tbsp extra virgin olive oil
  • 2 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ cup freshly grated Parmesan cheese
  • 2 tbsp lemon juice

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Arrange the chicken thighs in the dish. Drizzle them with olive oil, then sprinkle with Italian seasoning, garlic powder, salt, and pepper.
  3. In a bowl, mix together the Parmesan cheese and lemon juice until well combined.
  4. Spoon the cheese mixture evenly over each chicken thigh.
  5. Bake the chicken uncovered for 35-40 minutes, or until the internal temperature reaches 165°F (75°C).
  6. Let the chicken rest for five minutes before serving. Drizzle any remaining sauce over the chicken for extra flavor.

Notes

For extra crunch, broil the chicken for the last 2-3 minutes of cooking. Adjust the seasoning to taste.
