A delicious and satisfying pie combining crispy bacon, sweet onions, juicy tomatoes, and melty cheese, perfect for family dinners or potlucks.

Ingredients

  • 1 pre-baked deep 9-inch pie shell
  • 6 to 8 thick slices of bacon, fried crisp and chopped
  • 2 average-sized tomatoes, thinly sliced
  • 1 big yellow onion, thinly sliced
  • 1 1/2 cups mozzarella cheese, shredded
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley or chives, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium skillet, cook the onions in some bacon grease over medium heat until soft and brown, about 10 minutes. Let cool.
  3. Layer half of the onions, then half of the tomatoes, and half of the bacon in the pie crust. Repeat with the remaining ingredients.
  4. Mix together the mozzarella, mayo, sour cream, flour, garlic powder, pepper, and salt in a bowl until combined.
  5. Spread the cheesy mixture evenly over the layered pie.
  6. Place the pie on a baking sheet and bake for 35 to 40 minutes, or until bubbly and golden brown.
  7. Let the pie rest for a few minutes before serving, garnishing with parsley or chives if desired.

Notes

This pie can be served warm as a main or side dish. Great with a salad.
