A delicious and hearty pie featuring savory bacon, sweet tomatoes, and caramelized onions, topped with a creamy and cheesy mixture.

Ingredients

  • 1 pre-baked deep 9-inch pie shell
  • 6 to 8 thick slices of bacon, fried crisp and chopped up
  • 2 average-sized tomatoes, sliced thin
  • 1 big yellow onion, sliced thin
  • 1 1/2 cups mozzarella cheese, shredded
  • 1/2 cup mayo
  • 1/2 cup sour cream
  • 1 tablespoon regular white flour
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley or chives, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Toss onion slices into a medium skillet with some bacon grease and cook on medium heat until soft and brown, about 10 minutes. Let cool.
  3. Layer half the onions, followed by half the tomatoes, and half the bacon in the pie crust. Repeat with remaining ingredients.
  4. In a bowl, mix mozzarella, mayo, sour cream, flour, garlic powder, salt, and pepper until combined.
  5. Spread the cheesy mixture over the layered filling in the pie dish.
  6. Bake the pie for 35 to 40 minutes, or until the top is bubbly and golden brown.
  7. Let cool for a few minutes before serving. Sprinkle with fresh parsley or chives if desired.

Notes

For extra flavor, try using different types of cheese. You can prepare the filling ahead of time.
