- 1 cup (120 g) cornstarch
- 3 cups (720 ml) water
- 1/4 tsp cream of tartar
- 2 1/2 cups (500 g) granulated sugar
- 1 cup (240 ml) water
- 1 tbsp lemon juice
- 2 tsp rosewater (or 1½ tsp orange blossom)
- Powdered sugar, for dusting
- Cornstarch, for dusting
Instructions
- In a pot, whisk together cornstarch and 1 cup of cold water until smooth.
- Add 3 cups of water and cream of tartar; simmer until thickened.
- In another pot, combine sugar, 1 cup water, and lemon juice; boil to soft-ball stage (240°F / 115–116°C).
- Slowly whisk the sugar syrup into the hot starch base.
- Simmer gently, stirring often, for 45–60 minutes until thick and almost translucent.
- Remove from heat, stir in rosewater and any food coloring if desired.
- Pour into an 8×8 inch pan lined with parchment dusted with cornstarch and powdered sugar.
- Let set at room temperature for 12–24 hours before cutting into cubes.
Notes
Use a candy thermometer for best results, and ensure the mixture doesn’t stick to the pot.
