Description

Ingredients

  • 2 lemons (juiced and zested)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 zucchinis (sliced)
  • Fresh parsley (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix lemon juice, lemon zest, olive oil, minced garlic, paprika, cumin, salt, and pepper.
  3. Marinate the chicken in the mixture for at least 30 minutes.
  4. Arrange the marinated chicken and sliced zucchinis on a baking sheet.
  5. Roast in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the zucchinis are tender.
  6. Garnish with fresh parsley before serving.
