Ingredients

- 2 cups (250 g) all-purpose flour
- 1/4 cup (50 g) granulated sugar
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp fine salt
- 1 1/2 tsp chai spice blend (or 1/2 tsp each of cinnamon, cardamom, and ground ginger)
- 6 tbsp (85 g) cold unsalted butter
- 2 tbsp orange zest
- 3/4 cup (180 ml) heavy cream
- 1 large egg
- For the orange glaze: 1/2 cup powdered sugar + 1 tbsp orange juice
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and chai spice blend.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the orange zest.
- Warm the cream with a chai tea bag or loose chai and steep for 8–10 minutes; discard tea bag and allow to cool slightly.
- Stir the egg into the cream, then fold into the dry ingredients until just combined.
- Pat the dough to 3/4 inch thickness and cut into 8 wedges.
- Chill the shaped scones briefly, then bake for 15–18 minutes until golden.
- If desired, brush with orange glaze before serving.
Notes
For best results, keep all ingredients cold and avoid overworking the dough.
