Ingredients

  • 2 cups frozen edamame
  • 2 cups sugar snap peas
  • 2 carrots, julienned
  • 1/4 cup sesame seeds
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons olive oil
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 2 teaspoons grated ginger

Instructions

  1. Cook soba noodles in boiling water for 5-7 minutes until tender.
  2. Rinse under cold water to stop cooking and prevent sticking.
  3. In a large bowl, combine cooked soba noodles, edamame, sugar snap peas, carrots, and sesame seeds.
  4. In a separate bowl, whisk together soy sauce, olive oil, sesame oil, honey, and ginger.
  5. Pour sauce over the soba noodle mixture and toss to combine.
  6. Serve immediately or refrigerate for later use.
