Ingredients

- 2 cups heavy cream
- 5 egg yolks
- 3/4 cup sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 325°F (160°C).
- In a saucepan, heat the heavy cream and vanilla until just simmering.
- In a bowl, whisk together egg yolks and sugar until pale.
- Gradually add the hot cream to the egg mixture, whisking continually.
- Strain the mixture to remove any lumps.
- Pour the custard into ramekins and place them in a baking dish.
- Add hot water to the baking dish, halfway up the sides of the ramekins.
- Bake for about 45 minutes until set but still slightly jiggly in the center.
- Let cool, then refrigerate for at least 4 hours or overnight.
- Sprinkle sugar on top and caramelize with a torch or broiler before serving.
Notes
Serve immediately after caramelizing for the best texture. Feel free to flavor with orange zest or spices for variety.
