A classic French dessert featuring a rich custard base topped with a crunchy caramelized sugar layer.

Ingredients

  • 2 cups heavy cream
  • 5 egg yolks
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a saucepan, heat the heavy cream and vanilla until just simmering.
  3. In a bowl, whisk together egg yolks and sugar until pale.
  4. Gradually add the hot cream to the egg mixture, whisking continually.
  5. Strain the mixture to remove any lumps.
  6. Pour the custard into ramekins and place them in a baking dish.
  7. Add hot water to the baking dish, halfway up the sides of the ramekins.
  8. Bake for about 45 minutes until set but still slightly jiggly in the center.
  9. Let cool, then refrigerate for at least 4 hours or overnight.
  10. Sprinkle sugar on top and caramelize with a torch or broiler before serving.

Notes

Serve immediately after caramelizing for the best texture. Feel free to flavor with orange zest or spices for variety.
