- 4 medium sweet potatoes
- 3 cups chopped apples (mix of Granny Smith and Honeycrisp)
- 1 teaspoon cinnamon
- 1/4 cup chopped nuts (pecans or walnuts)
- 2 tablespoons brown sugar
- Salt to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Bake sweet potatoes for about 45 minutes or until tender.
- While potatoes bake, sauté chopped apples with cinnamon, nuts, and brown sugar until tender.
- Once sweet potatoes are cooked, cut them open and scoop some flesh into the apple mixture.
- Stuff the apples and flesh back into the sweet potatoes.
- Return stuffed sweet potatoes to the oven for an additional 10-15 minutes.
- Serve warm and enjoy!
