Ingredients

  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup milk
  • 2 large eggs
  • 2 tbsp melted butter
  • 1 cup finely diced apples
  • Maple syrup for serving
  • Whipped cream, for serving (optional)

Instructions

  1. In a large bowl, mix together the flour, baking powder, cinnamon, nutmeg, and salt.
  2. In another bowl, whisk together the milk, eggs, and melted butter.
  3. Combine the wet and dry ingredients until just mixed; do not overmix.
  4. Fold in the finely diced apples gently.
  5. Preheat a nonstick skillet or griddle over medium heat for about 5 minutes.
  6. Pour batter onto the hot griddle, using about 1/4 cup for each pancake.
  7. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 2-3 minutes until golden brown.
  8. Keep pancakes warm in a 200°F (90°C) oven while cooking the rest.
  9. Serve stacked with maple syrup and enjoy!

Notes

For a gluten-free option, use a gluten-free flour blend. Keep pancakes warm in the oven until ready to serve.
