- 1/2 tsp nutmeg

- 1 cup milk
- 2 large eggs
- 2 tbsp melted butter
- 1 cup finely diced apples
- Maple syrup for serving
- Whipped cream, for serving (optional)
Instructions
- In a large bowl, mix together the flour, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, whisk together the milk, eggs, and melted butter.
- Combine the wet and dry ingredients until just mixed; do not overmix.
- Fold in the finely diced apples gently.
- Preheat a nonstick skillet or griddle over medium heat for about 5 minutes.
- Pour batter onto the hot griddle, using about 1/4 cup for each pancake.
- Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 2-3 minutes until golden brown.
- Keep pancakes warm in a 200°F (90°C) oven while cooking the rest.
- Serve stacked with maple syrup and enjoy!

For a gluten-free option, use a gluten-free flour blend. Keep pancakes warm in the oven until ready to serve.
