Description

A delightful fusion of macarons and apple pie, featuring crispy shells and spiced apple filling.


Ingredients

Scale
  • 2 cups almond flour
  • 1 1/2 cups powdered sugar
  • 4 large egg whites (aged)
  • 1/4 tsp cream of tartar
  • 1 cup diced apples
  • 1/2 cup granulated sugar
  • 1 tsp cinnamon
  • 2 tbsp unsalted butter
  • Cinnamon sugar for dusting

Instructions

  1. Prepare the macaron batter by whisking aged egg whites until frothy, then gradually add cream of tartar and granulated sugar until stiff peaks form.
  2. Sift together almond flour and powdered sugar, then gently fold into the meringue until combined.
  3. Pipe circles onto a baking sheet lined with parchment paper, then let them rest for 30-60 minutes until a skin forms.
  4. Bake in a preheated oven at 300°F (150°C) for 12-15 minutes until the shells are set and can be lifted off easily.
  5. For the filling, cook diced apples with sugar, cinnamon, and butter until soft, then let it cool.
  6. Sandwich the apple filling between two macaron shells, and dust with cinnamon sugar if desired.

Notes

Allow macarons to cool completely before removing them from the baking sheet. Store in an airtight container in the fridge for up to a week.
