Ingredients

- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1 tsp vanilla extract
- 2 cups chopped apples (Granny Smith or Honeycrisp)
- 1/4 cup brown sugar
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 cup rolled oats
- 1/4 cup melted butter
- 1/2 cup flour (or gluten-free substitute)
Instructions
- Preheat the oven to 350°F (175°C) and line mini muffin tins with cupcake liners.
- In a bowl, beat together cream cheese, sugar, and vanilla until smooth.
- Sauté chopped apples with brown sugar, cinnamon, and nutmeg until tender.
- Scoop the cheesecake filling and sautéed apple mixture into the muffin tins.
- In another bowl, mix oats and melted butter for the crumble, then sprinkle it on top of the filled muffin cups.
- Bake for 25 minutes or until set and golden brown.
- Let cool before serving.
Notes
Serve with whipped cream and caramel drizzle for an extra treat! They can be stored in the refrigerator for up to 4 days.
