Description

A delightful fusion of cheesecake and spiced apples in bite-sized delights, topped with a crunchy oat crumble.


Ingredients

Scale
  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 2 cups chopped apples (Granny Smith or Honeycrisp)
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup rolled oats
  • 1/4 cup melted butter
  • 1/2 cup flour (or gluten-free substitute)

Instructions

  1. Preheat the oven to 350°F (175°C) and line mini muffin tins with cupcake liners.
  2. In a bowl, beat together cream cheese, sugar, and vanilla until smooth.
  3. Sauté chopped apples with brown sugar, cinnamon, and nutmeg until tender.
  4. Scoop the cheesecake filling and sautéed apple mixture into the muffin tins.
  5. In another bowl, mix oats and melted butter for the crumble, then sprinkle it on top of the filled muffin cups.
  6. Bake for 25 minutes or until set and golden brown.
  7. Let cool before serving.

Notes

Serve with whipped cream and caramel drizzle for an extra treat! They can be stored in the refrigerator for up to 4 days.
