- 2 minced garlic cloves
- 1 shallot, minced
- 1 tablespoon butter
- 1/2 cup white wine or chicken stock
- 4 oz cream cheese
- 1/2 cup heavy cream
- 1/3 cup grated Parmesan
- 1 tablespoon lemon juice
- Chopped parsley, for garnish
Instructions
- Season the chicken with salt, pepper, and smoked paprika.
- Heat olive oil in a skillet over medium-high heat and sear chicken for 2–3 minutes on each side until golden.
- Transfer the skillet to a 375°F oven and roast chicken until it reaches an internal temperature of 160–165°F (about 10–12 minutes).
- In the same skillet, sauté minced garlic and shallot in butter.
- Deglaze the pan with white wine or chicken stock.
- Whisk in the cream cheese and heavy cream until smooth.
- Stir in grated Parmesan, lemon juice, and chopped parsley.
- Return the chicken to the sauce and simmer for 2–3 minutes before serving.
Notes
For extra juiciness, consider brining the chicken beforehand. Serve over buttered egg noodles or creamy polenta.
