Ingredients

  • 2 cups gluten-free all-purpose flour blend
  • 1/2 tsp xanthan gum
  • 1 tsp kosher salt
  • 1/2 cup cold unsalted butter (or coconut oil)
  • 1 large egg
  • 35 tbsp ice water
  • 1 lb cooked ground beef (or filling of choice)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/4 cup chopped olives
  • 2 tbsp tomato paste

Instructions

  1. Start by making a short pastry from the gluten-free flour, xanthan gum, and kosher salt.
  2. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Add the egg and ice water until a cohesive dough forms, then chill for 30–60 minutes.
  4. Prepare your filling by sautéing onion and garlic, then mix in cooked beef and spices.
  5. Cool the filling to room temperature before portioning.
  6. Roll the dough to about 1/8-inch thickness and cut into 4–5 inch rounds.
  7. Fill each round with 2–3 tablespoons of filling and seal with a fork.
  8. Brush with egg wash and bake at 400°F for 18–22 minutes until golden.

Notes

Use a light dusting of gluten-free flour when rolling the dough to avoid sticking. For extra crispness, finish in an air fryer for a few minutes.
