- 1 tablespoon grated fresh ginger
- 4 minced garlic cloves
- 1/4 cup teriyaki sauce
- 1/4 cup barbecue sauce
- 2 cups cut-up fresh pineapple
- 1 red bell pepper, chopped into 1-inch pieces
- 1 pound boneless, skinless chicken breasts, chopped into cubes
Instructions
- Toss the ginger, garlic, teriyaki, and barbecue sauces together in a big bowl. Mix them well.
- Drop in the pineapple, chicken, and bell pepper. Coat everything with that tasty sauce mix.
- Scoop the coated chicken mix into your air fryer basket. Set it to 400°F and let it cook for 11 minutes.
- Pause to give it a quick stir halfway through.
- Once the chicken reaches an internal temperature of 165°F, you’re ready.
- Spoon your hot chicken and veggies over a pile of rice and enjoy!
Notes
Serve over rice and add sesame seeds for crunch. The mixture can be prepped ahead and refrigerated until ready to cook.
