Description
A quick and delicious cheesesteak recipe featuring thin-sliced beef, sweet onions, and melted cheese served on small rolls.
Ingredients

- 1 lb thin-sliced beef (ribeye, flank, or sirloin)
- 1 large onion, sliced
- 1 green bell pepper, sliced
- 1 tbsp olive oil
- 1 tbsp butter
- 1 tsp kosher salt
- 1/2 tsp freshly ground black pepper
- 8 oz sliced provolone cheese or 6–8 slices American cheese
- 4–6 dinkie rolls or small slider rolls
Instructions
- Partially freeze the beef for 20 minutes, then thinly slice against the grain into 1/8–1/4-inch strips.
- In a heavy skillet, sauté the sliced onion and bell pepper in olive oil and butter over medium-high heat until softened and caramelized (about 7–8 minutes).
- Push the veggies to the side, increase heat, and sear the beef in batches for 1–2 minutes per side until browned. Season with salt and pepper.
- Combine everything in the pan and top with sliced cheese. Cover for 1–2 minutes to melt the cheese.
- Pile the mixture onto buttered dinkie rolls and serve immediately.
Notes
For extra flavor, toast the rolls in butter at the end. Adjust ingredients to make it gluten-free or dairy-free as needed.
