Instructions
- Combine rolled oats, eggs, and ripe banana in a blender or food processor. Blend until smooth and homogenous.
- Heat a non-stick skillet or griddle over medium heat and lightly grease if necessary.
- Pour small scoops of batter (about ¼ cup each) onto the pan. Cook for 2-3 minutes per side, flipping when bubbles form.
- Plate your pancakes fresh off the heat and serve with toppings or enjoy plain.
